Ingredients
Filling:
4 large apples-peeled, cored, thinly sliced
2 tbsp coconut sugar
2 tbsp gluten free flour
1/2 tsp cinnamon
1/2 tsp cardamom
1/2 tsp nutmeg
2 tbsp maple syrup
1tbsp water (possibly more if mixture is more doughy than runny)
1 tbsp lemon juice
1 tsp vanilla extract
Topping:
1 cup of gluten free flour (Bobs Red Mill All Purpose)
1/2 cup coconut sugar
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1/2 stick of Kerrygold butter softened
5 full sheets of Pamelas gluten free graham crackers (smashed into crumbles), more if you feel like it.
Chopped Walnuts (optional)
Directions:
Preheat oven to 375
Topping:
Combine Dry topping ingredients
Add butter to dry ingredients and work together until it creates a crumbly texture.
Filling:
1. Peel, core and thinly slice apples. Put into 8x11 baking dish.
2. In a medium bowl, stir together all filling dry ingredients.
3. Add in all wet ingredients and stir together. The mixture should be thick but still easy to pour. If its too thick, add water, too runny-add some flour.
4. Pour over apples, stir to coat and arrange in an even layer.
5. Top with crumble mixture.
Put into oven for 40-45 minutes.
Crumble should be golden brown and apples fork tender.
